The Shaykh : Zakat al-Fitr, first, its ruling is obligatory, based on the statement of Ibn 'Umar (may Allah be pleased with him and his father):
the Messenger of Allah (ﷺ) prescribed Zakat-ul-Fitr one sa' of dates or one sa' of barley فرض رسول الله صلى الله عليه وسلم زكاة الفطر صاعاً من تمر أو صاعاً من شعير

Second: From which type is it paid? It is paid from food, and it is not restricted to dates and barley. This is because Ibn 'Umar's statement of "a sa' of dates or a sa' of barley" was based on the fact that the majority of the staple food at that time was dates and barley. For this reason, Abu Sa'id (may Allah be pleased with him) said:
We used to pay it in the time of the Prophet (peace and blessings be upon him) as a sa' of food, and our food at that time was dates, barley, raisins, and dried cheese. كنا نخرجها على عهد النبي صلى الله عليه وسلم صاعاً من طعام وكان طعامنا يومئذٍ التمر والشعير والزبيب والأقط
Wheat was only present in the time of the Messenger in small quantities. Therefore, one pays a sa' of food. If we were in a country where their food is meat, or fish meat, one would pay from fish meat, because it is a sa' of food.
