Question:
I was orphaned of both my father and mother, and my uncle took charge of my care. He raised me and treated me well from when I was very young, at the age of seven. His compassionate wife participated in this care, and I stayed with her until I was twenty years old. My uncle took charge of my care and spent on me during my studies despite his poverty. The question here is: Is it permissible for my uncle's wife to uncover herself in front of me, or is it not permissible? I consider her a sister, in the sense that she did not veil herself from me before, and she continued to uncover herself in front of me until the end.

Answer:
This is a good deed from your uncle, may Allah reward him with good, who treated you well, raised you, and spent on you. An uncle is like a father; it is not strange. An uncle is in the position of a father, as the Prophet (peace and blessings be upon him) said:
Indeed, the uncle of a man is the Sinw of his father.إن عم الرجل صنو أبيه

If he treated you well, raised you, and spent on you, then this is a praiseworthy deed. You must make du'a for him and thank him for this deed, whether he is alive or dead.
As for his wife who treated you well, she is in the position of your mother, not your sister. She is in the position of the mother who raised you and treated you well. However, she does not uncover herself in front of you, and she is not a mahram for you. But you should make du'a for her and thank her for her good deed with her husband. However, you must not be alone with her, and she does not uncover herself in front of you; rather, she must veil herself from you. She is a stranger to you, unless she breastfed you, or her daughter breastfed you, or her sister breastfed you; in that case, she would be your aunt. There is no harm if there is a milk kinship between you and her, whether she breastfed you when you were small, or her sister breastfed you, making her your aunt, or her daughter breastfed you, making her your grandmother. There is no harm. However, merely having raised you does not make her a mahram for you, and she does not uncover herself in front of you. Rather, she must veil herself from you, and you must not look at her. But you must thank her, treat her well, and recognize her status, her kindness, and the kindness of her husband—this uncle of yours—toward you. Because the Prophet (peace and blessings be upon him) said:
and requite him who does a favour to you, but if you are unable to requite him, go on praying for him till you are sure that you have requited him adequately.من صنع إليكم معروفًا؛ فكافئوه، فإن لم تجد ما تكافئوه فادعوا له حتى تروا أنكم قد كافأتموه

Whoever is not grateful to the people, he is not grateful to Allah.من لا يشكر الناس لا يشكر الله

Answer: Unless she is an old woman, meaning she is not desired, does not adorn herself, and is not like what Allah said:
And women of post-menstrual age who have no desire for marriage - there is no blame upon them for putting aside their outer garmentsوَالْقَوَاعِدُ مِنَ النِّسَاءِ اللَّاتِي لَا يَرْجُونَ نِكَاحًا فَلَيْسَ عَلَيْهِنَّ جُنَاحٌ أَنْ يَضَعْنَ ثِيَابَهُنَّ
[An-Nur: 60]. If she is an old woman who does not engage in adornment, then there is no harm. But if she engages in adornment, and what may attract men to her is visible from her, then it is not permissible for her to uncover herself, and no one is allowed to look at her.
And regarding shaking hands, a man does not shake hands with women. No, shaking hands is between men and men, or between a man and his mahrams, such as his mother or his aunt. As for shaking hands with women, no. The Prophet (peace and blessings be upon him) said:
But I do not shake hands with women.إني لا أصافح النساء

Not an old woman or a young girl; every one of them has a taker.
