Question: What is the ruling on looking at the maid in the house?

Answer: She must observe hijab, and you must lower your gaze and order her to observe hijab, based on the saying of Allah (Mighty and Majestic): :
Tell the believing men to reduce [some] of their vision and guard their private partsقُلْ لِلْمُؤْمِنِينَ يَغُضُّوا مِنْ أَبْصَارِهِمْ وَيَحْفَظُوا فُرُوجَهُمْ
[Al-Nur: 30]. She must observe hijab and cover herself, and you must not be alone with her, because being alone is one of the causes of fitnah (trial, discord or temptation). It is authentically reported from the Prophet (peace and blessings be upon him) that he said:
No man should be alone with a woman because the Shaitan will be the third one present.لا يخلون رجل بامرأة فإن ثالثهما الشيطان

So do not be alone with her, nor with your brother’s wife, nor with your uncle’s wife, nor with any other woman who is not a mahram (a relative one may not marry) to you, due to the aforementioned hadith. As for greeting her, there is nothing wrong with it, nor with speaking to her out of necessity, but without being alone and without shaking hands.
