This is a good question. As for the first issue, the recommended practice (sunnah) is for a person to sacrifice one animal on behalf of himself and his household, as the Messenger of Allah (peace and blessings be upon him) used to do. We know that the Messenger of Allah (peace and blessings be upon him) was the most noble of creation, yet he limited himself to one animal. Therefore, the recommended practice is better. However, if you add an animal for the purpose you mentioned, there is nothing wrong with it, if Allah wills.
As for the one with a cut ear and a broken horn, the correct view is that it is permissible and sufficient, but it is disliked (makruh); because it is deficient in its physical form. The Prophet (peace and blessings be upon him) commanded us to seek the best of the eye and the ear, meaning: we should seek their excellence and completeness.
