She does not have to wear a hijab if she is praying and there are no non-mahram men present; she may uncover her face. As for covering her head and body, that is because it is her 'awrah (part of the body that must be covered), so standing before Allah (Mighty and Majestic) while covered is better.
And because someone who is not a mahram (a relative one may not marry) to her may appear; someone who is not a mahram to her may enter the place. So she should exercise caution, except for the face, which she uncovers if there is no non-mahram present, and she covers the rest of her body. This is what is prescribed (mashru'), this is what is obligatory for her, except for the hands, where there is no harm in uncovering them, though covering them is better. As for the face, the sunnah (recommended practice) is to uncover it in prayer if there is no non-mahram present.
