If the animal being slaughtered is a cow, or from goats or sheep, it is slaughtered on its side. It is laid on its left side, then one places his foot on its head, then he slaughters it by cutting the throat. He places his foot on its neck, then holds the head with his hand and cuts the windpipe and the esophagus, severing the windpipe, the esophagus, and the two carotid arteries, meaning the two vessels surrounding the windpipe and the esophagus. This is the Sunnah. He places his foot on its side to make it easier for it and prevent it from thrashing about.
The slaughter should be done with a sharp, strong knife with force, so as not to torment it. It is done at the throat, cutting the windpipe, the esophagus, and the two carotid arteries. This is the perfection. If he cuts the windpipe and the esophagus, that suffices. If he cuts one of the carotid arteries along with them, that suffices. But the best is that he cuts the windpipe, the esophagus, and the two carotid arteries, while holding the head with his left hand and slaughtering with his right, and placing his foot on its side so that it does not thrash about.
